Traditional method of cooking skewers over flaming charcoal chicken or lamb marinated in sauce with delicate herb and mixed spices before being cooked, served with fresh salad and mint yoghurt.
A biryani is made with specially flavoured basmati rice and a mixture of spices, served with a special vegetable curry.
Cooked in a special balti sauce with green chillies, tomatoes, mince meat and yoghurt. Medium or hot.

Cooked with a special blend of spices. Medium hot and almost dry.
The characteristics of these dishes are derived from the use of tomatoes, lentils and a mix of spices.
A method of preparation, similar to bhuna, onions are mixed with spices and briskly fried. Medium.

A parsee dish, cooked with lentils and pineapple. Hot & sour.

Oriental spices are used to make a delicately flavoured sauce with a hint of ginger, garlic and lots of tomatoes. Medium.
